What can you do in a classroom garden in the fall, winter and spring?

I teach in the Seattle area and we have a small garden outside.
I need some actiities for my kids to do in the fall - right now - and in the spring. Do you think it would be okay to plant stuff right before school lets out in June then harvest in September knowing that we won't get to it. I think I can have a parent stop by once in a while but it will probably not get maintanence until school starts up again?
Also ideas on doing gardening/planting activities or things in the classroom?

My interest in gardening began in about 1st grade. My little school in suburbia NJ started a children's garden that very year (1981). I just visited that same garden with my son a few weeks ago while over my parents home... it was really cool, the project continues there and the lesson for me has never ended! I'm now a huge gardener.

Ok- so to answer your question:
As far as activities go: If you want to keep it simple and need a low summer maintenance plant perhaps introduce ornamental grass varieties to areas of the garden for study.

Your area is a grass growing mecca. You could even study regular old grass... it may grow interestingly.
It would be a great way to discuss the difference between synthetic fertilizers and natural organics, discuss NPK. maybe.. you get the picture... there is a lot of science in a little patch of grass.

If you were thinking bolder- you would def' want to consider Spring Bulbs for a wonderful lesson. Your area is also great for TULIPS and DAFIDOLDS. You would plant them anytime in October or November and expect a nice bloom in May. The bulbs may begin to emerge in late January or February and your class could be on the look out for them.

I think you may also be able to plant some lettuce now in your area for winter harvest you will have to follow up on this though...
You definitely can plant Pansies in the next few weeks. Pansies will overwinter and flourish in the Spring.
These are best started from plant. They won't make it over summer but they are great for Fall, early Winter and Spring.

You could also consider a butterfly garden for sure. Check out perennials that attract butterflies.... "Butterfly Bush" for instance.

Also, as far as activities_ you could also take this opportunity to introduce children to composting. I believe composting is the most responsible activity a gardener can do. This activity could last thru' winter for sure... If you are not currently informed about composting check into it. I have read 15 books about making compost. There are only two worth reading.
